Margaret's Commissary

Al & Margaret Pizzola and Don & AJ Southard create a partnership called Margaret’s Commissary, implementing one of the first assembly lines for food to provide quality sandwiches, pizzas, and burritos to C-Stores and neighborhood bars throughout Southern California. Meanwhile, deliveries expand to Utah, Arizona, Northern CA, and local gas stations.

Delseys Brand Creation

Magaret’s Commissary rolls out the first line of burritos under the Delsey's Brand. Al and Don purchase the site in Compton, CA.

M.C.I. Foods, Inc. Is Born

Margaret's Commissary pivots to produce retail burritos, emerging as the leading provider on the West Coast. The business also rebrands to M.C.I. Foods, Inc.

M.C.I. Grows Exponentially

M.C.I. undergoes a significant expansion, increasing its cooking capacity by 500%, setting the stage for a new era of sales growth. Meanwhile, Delsey's burritos brand undergoes a transformation, now known as Los Cabos® Mexican Foods, and is introduced into the K-12 school sales channel. Adding to the innovation, M.C.I. introduces the Cabo Classics® line of upscale Mexican foods, Cabo Primo® line for upscale, ala carte school products, and the Cabo Real® brand for the Scratch Cook Look®, emphasizing minimally processed offerings.

The attainment of the Safe Quality Food (SQF) certification for its plants, aligning with the globally recognized standards of the Global Food Safety Initiative (GFSI), stands as a testament to the company's dedication to ensuring top-notch food safety. In 2023, Los Cabos® Mexican Foods expands its operations at the Santa Fe Springs, CA plant, introducing a Tamale production line to augment its diverse range of Mexican Food Products, showcasing a commitment to both innovation and variety. The company further solidifies its industry leadership by pioneering the launch of CN-labeled tamales tailored for the K-12 segment, demonstrating a keen understanding of market needs. Simultaneously, key leadership changes unfold with Dan Southard stepping into the role of CEO and the addition of Mark Thomson as President, signaling a strategic move to bolster the company's vision and growth trajectory. These collective accomplishments highlight Los Cabos® Mexican Foods' unwavering dedication to quality, innovation, and strategic leadership.

Today, Los Cabos® Mexican Foods is recognized as the leading provider of Mexican foods to K-12 schools in the U.S. Los Cabos® Mexican Foods continues to experience high demand from the largest school districts in the country, as well as from several other food service customers. It now offers 120+ SKUs and continues to expand annually.
